A new Chianti Classico Gran Selezione has captured the attention of wine lovers and critics. Ipsus, crafted by Giovanni Mazzei, is a 100 percent Sangiovese that stays true to the region's traditions. Made from a single vineyard, it reflects the Mazzei family's deep roots in Chianti Classico, stretching back over six centuries.

The Mazzei family has owned Castello di Fonterutoli since 1398, when an ancestor first mentioned Chianti wine in a letter. Giovanni Mazzei developed Ipsus to honour the terroir of Chianti Classico, using only Sangiovese grapes. The wine comes from Il Caggio, a vineyard sitting between 1,050 and 1,150 feet, with deep, well-drained soils and ideal sunlight.

The estate operates as a living ecosystem, supporting biodiversity and wildlife corridors. Vineyards are farmed organically, blending traditional methods with modern innovation. Ipsus 2021 was fermented in small batches, then aged in large oak barrels, smaller tonneaux, and ceramic vats to refine its texture and freshness. Each section of the vineyard is harvested and vinified separately, depending on soil, sun exposure, and vine age. This careful process enhances the wine's purity and complexity. Only 6,000 bottles of the 2021 vintage were produced, making it a rare find. Critics and collectors have praised Ipsus for its distinct character. Sommelier Derrick Goodman called it 'a unicorn'—a Sangiovese with unmatched focus. The 2021 release offers aromas of black cherry, violet, and orange peel, with flavours of Luxardo cherry, blackberry, and spice. Collectors like Jakub Kolin and Robert Smolens have sought out multiple vintages.

Ipsus stands out as a limited-production wine rooted in tradition. Its single-vineyard approach and organic farming reflect the Mazzei family's long-standing commitment to Chianti Classico. With only 6,000 bottles available, the 2021 vintage remains a sought-after expression of Sangiovese.
