A new AI system called BurgerAI has been developed to create custom burger recipes. It tailors dishes to different age groups, genders, and lifestyles while balancing taste, sustainability, and nutritional value. The technology aims to revolutionise how burgers are designed and consumed. BurgerAI was trained on 2,216 existing recipes. It can evaluate a burger’s flavour, texture, nutritional content, and environmental impact. The system’s capabilities were put to the test in a blind study with 101 participants, where AI-generated burgers matched the Big Mac in flavour, texture, and overall appeal.

In separate trials, an AI-designed mushroom burger proved over ten times more sustainable than a conventional one. Another AI-created bean burger nearly doubled the nutritional value of a standard burger. These results highlight the system’s potential to improve traditional recipes.

Burgers have a long history, with the modern version appearing in the late 19th century as a simple mix of ground meat and bread. Today, Americans alone eat around 50 billion burgers each year. With an estimated 10 septillion possible recipes worldwide, BurgerAI offers a data-driven approach to navigating this vast culinary space. The AI system demonstrates that smarter recipe design can enhance sustainability and nutrition without sacrificing taste. Its ability to generate high-quality burgers could influence both consumer choices and food industry practices. The technology may also help reduce the environmental footprint of a globally popular food.
