Legumes are gaining attention as a sustainable and nutritious alternative to meat and dairy. They offer high protein content, often surpassing lean beef, while producing far fewer carbon emissions. But proper preparation and food pairings are key to unlocking their full benefits.

The Consumer Advice Centre of Lower Saxony (Verbraucherzentrale Niedersachsen) has spent five years promoting legumes as a protein-rich meat substitute. Through initiatives like the Hülsenfrüchte in der Kindertagespflege programme, they provided childcare centres with recipes, cooking tips, and guidance on the protein, fibre, and environmental advantages of legumes. The organisation also published an article urging people to eat more legumes while calling for a VAT reduction from 7% to 0%—matching the rate for unprocessed fruits and vegetables. Additionally, they criticised the Nutri-Score system for ignoring additives but pushed for its mandatory adoption to steer consumers toward healthier options like legumes.

Legumes require careful handling to ensure safety and digestibility. Boiling them for at least 15 minutes at 100°C (212°F) neutralises phasin, a naturally occurring toxin. Soaking beans beforehand not only reduces cooking time but also minimises digestive discomfort. Adding spices such as cardamom, cinnamon, turmeric, ginger, cumin, or fennel can further improve digestion.

While legumes contain more protein than lean beef, the body absorbs plant-based protein less efficiently. Pairing them with grains or other complementary foods helps the body synthesise complete proteins. This combination makes legumes a practical way to meet dietary needs without relying on animal products.

The push for legumes comes with clear benefits for health and the environment. Their high fibre content supports digestion, and their low carbon footprint makes them a climate-smart choice. The Consumer Advice Centre continues to advocate for fairer taxation on plant-based alternatives, aiming to make them as affordable as animal-based products.
